Negroni Sbagliato

The "mistaken" Negroni created at Bar Basso in Milan. Prosecco replaces gin for a lighter, bubbly aperitivo.

Equal parts, built over ice, with the Prosecco going in last: that order matters, because one gentle stir after the top keeps the bubbles you added the Prosecco for. With no gin to hide behind, the Campari and the vermouth rosso carry the drink, so use a vermouth you opened recently; oxidized vermouth shows immediately.

Lombardy

Mirko Stocchetto first poured it in 1972 at Bar Basso in Milan, reaching for sparkling wine instead of gin, and the bar still serves it in the oversized stemmed goblets he designed. It’s an early-evening drink, ordered at the counter before dinner as the city’s aperitivo hour gets going.
