Negroni Bianco

The clear Negroni: gin, vermouth bianco and bitter bianco in equal parts, stirred over ice. Floral and softer than the red, with the same bitter finish.

The Negroni Bianco keeps the equal-parts structure and swaps each red bottle for a clear one: vermouth bianco for rosso, a bitter bianco for Campari. The result is floral and softer, with the bitterness arriving at the finish rather than up front. A lemon twist, not orange, suits its paler, herbal profile.

Tuscany

It takes its name from the Negroni, born in Florence around 1919 at Caffè Casoni on Via de' Tornabuoni, but it is a recent variation rather than a Florentine classic. Drink it where you would a Negroni: before dinner, at aperitivo.
