Contessa

A variation on the Cardinale using Aperol instead of Campari. Lighter, fruitier, and more approachable.

The Contessa keeps the Negroni's equal parts but swaps Campari for Aperol and sweet vermouth for dry, which makes a paler, lighter drink with a gentle bitterness. The choice that matters is the vermouth: it should be dry, as in the original, or the drink turns sweet and loses its point. Serve it up in a chilled coupe, with no ice in the glass.

Where it comes from

Despite the Italian name, the Contessa is American: it was on the menu at No. 9 Park in Boston by the late 2000s, part of a flight of Negroni variations created by John Gertsen and his bar team. It belongs to the aperitivo hour, the lighter choice when a full Negroni feels like too much before dinner.
