Pancetta

Pancetta needs a form-specific choice: fresh pancetta appears in ragù, while rolled pancetta is also sold in thin slices.

At the table

The Academy’s ragù uses fresh pancetta separately from the ground meat. Citterio’s rolled pancetta comes in thin, ready-cut slices: a different form for a different preparation.

Check which form the recipe calls for before buying, keeping pancetta distinct from plain pork mince.
