Try it in the kitchen

Our suggestion: serve broad slices with olive oil, basil and fresh cheese. Give the flesh room on the plate instead of cutting every slice into small pieces.

Cucchiaio d’Argento’s Caprese uses thick slices of cuore di bue tomato with mozzarella, basil, whole ciliegini and halved datterini.

Ask for the type

Check the cultivar when shape matters. Producers use Cuore di bue for classic forms and related hybrids; the Borsalina example here is not a definition of every oxheart tomato.
