Ground Pork

Ground pork has a documented place in the Academy’s mixed-meat variation of ragù alla bolognese.

At the table

The Academy permits a mixed-meat variant using beef and pork loin or neck. That pork is distinct from the pancetta named separately in the recipe.

Decide which version you are following before buying the mince. Plain ground pork should not silently replace the separate pancetta simply because both come from the same animal.
