Try it in the kitchen

Use sliced stalks in a salad with apple, or add chopped stalks and leaves to a vegetable soup. Check whether you have bought rib celery or a cutting type before planning the size of the pieces.

In the Campania Region’s Genovese recipe, chopped celery joins carrot, parsley and lard in the soffritto before the meat and onions cook slowly.

Stalks or a cutting type?

Choose a rib type when you want substantial stalk pieces. For a cutting type, ask for that description explicitly; the green color alone does not tell you how the plant is selected for use.
