Celeriac is a round to oval root vegetable with pale brown skin, white flesh and an aromatic celery character.

Try it in the kitchen
Try celeriac raw in salads or cooked in soups and gratins. Slice it finely for a salad with apple, or cook it for a purée to accompany roasted vegetables.
Root celery, rather than stalk celery
Choose the rounded underground part sold as sedano rapa. A named cultivar such as Di Verona identifies a particular example; its name alone does not establish the growing origin of the root you buy.
