A white spear from the Piave plain

Cimadolmo’s protected asparagus combines fully white spears with the tender texture associated with its alluvial growing area.

The specification requires the spears to be entirely white, whole and fresh, with a length of 20–22 cm. It describes a tender product without fibrousness, linking those characteristics with loose sandy-silty soils that offer little resistance to growth.

Cimadolmo is a protected origin rather than one exclusive cultivar. The approved planting material includes several named varieties. The origin, growing rules and final characteristics together identify the product, with the label also stating its commercial quality category and diameter class.

Mounded rows and mulch

The specification requires mounding the growing rows and applying mulch to obtain wholly white spears. Harvest begins in March and must finish by May 30.

Eleven municipalities around the Piave

The PGI production zone covers eleven municipalities in Treviso province, including Cimadolmo, Oderzo, Ormelle and Ponte di Piave. The specification describes the Piave’s alluvial plain, permeable sandy-silty soils and a temperate, humid climate with rainy springs.

Try it in the kitchen

Steam the spears and serve with butter or olive oil. Compare them with Bassano asparagus as two distinct protected products from Veneto.

Recognize the protected name

For a purchase tied to this origin, look for the full name “Asparago bianco di Cimadolmo” with the PGI indication. A similar name or variety alone does not establish this protected origin.

Questions worth asking

Must the spears be completely white?

Yes. The Cimadolmo specification requires entirely white spears, unlike rules that permit limited color traces for some other protected white asparagus.

Is Cimadolmo the name of one variety?

No. Several varieties are approved, including Precoce d’Argenteuil, Larac and Dariana. The PGI identifies the protected origin and production requirements.

When does harvesting finish?

The specified harvest must not continue beyond May 30. Its duration also depends on the age of the planting.
