Bassano’s local asparagus ecotype arrives in bundles with a distinctive traditional fastening.

Asparago Bianco di Bassano descends from the local Comune, or Chiaro, di Bassano ecotype. Its spears are specified as tender, with closed tips and little fibrousness. Slight pink color can be permitted in limited areas of the spear, so white does not mean that every trace of color automatically disqualifies it.

The bundle itself carries part of the identity. After the bases are trimmed evenly, the spears are tied with a stroppa, a young willow branch, and given a progressive identification mark. It is a small but specific link between agricultural work and the product you see at the market.

Keeping the spears white

The specification permits dark plastic mulch, or another suitable material, to protect the spears from light during harvest. The usual harvest window runs from March 1 to June 15; authorized forced or protected crops may start as early as February 1.

The Brenta’s alluvial landscape

Production, conditioning and packaging take place in ten named municipalities of Vicenza province, including Bassano del Grappa, Rosà and Marostica. The specification connects the asparagus with permeable alluvial soils and the local climate influenced by the Brenta and the shelter of the mountains.
