Swordfish is among Sicily’s fish specialties. With roasted fish, try salmoriglio made with olive oil, lemon, seasonings, parsley and sometimes garlic. Choose the cut and thickness called for by your recipe: a steak and a thin slice for an involtino require different preparations.
