A plateau potato with more than one shape

Patata della Sila is a protected origin shared by several varieties, rather than the name of a single cultivar.

A round potato and an elongated one can both belong to Patata della Sila PGI. The specification allows round, oval or oblong tubers according to the variety. The protected identity therefore rests on the growing area and production requirements as well as the cultivar.

What the approved varieties share at sale is compact flesh that does not give way under pressure, a skin resistant to rubbing and a minimum dry-matter content of 19%. These are defined product characteristics, not a promise that every variety has identical color or behavior in the kitchen.

The crop begins with seed potatoes

The specification requires certified seed potatoes and a growing cycle within the defined production area. It also permits the farm to reuse its own seed for no more than one production cycle.

Pre-sprouting is allowed before planting. These are cultivation rules for the seed tubers, not instructions for storing or sprouting potatoes you plan to cook.

Around the Sila plateau

The defined production municipalities lie in the provinces of Cosenza and Catanzaro, surrounding and delimiting the Sila plateau. The specification connects the area’s soils and the local climate with slow, steady tuber growth and plant maturation.

Calabria

Try it in the kitchen

Roast it with olive oil, or compare it with Bologna’s Primura potato in the same preparation. Several varieties qualify under Sila’s specification, with round, oval or elongated tubers depending on the variety.

Recognize the protected name

For a purchase tied to this origin, look for the full name “Patata della Sila” with the PGI indication. A similar name or variety alone does not establish this protected origin.

Questions worth asking

Is Patata della Sila one potato variety?

No. The specification allows several named varieties, including Agria, Desirée, Marabel and Nicola. The PGI is a protected origin, not a single cultivar.

Must every tuber have the same shape?

No. Round, oval and oblong shapes are permitted according to the variety.

What does the specification say about the flesh?

It must be compact, without giving way under pressure. The specified minimum dry-matter content is 19%.
