Try it in the kitchen

Cut round eggplants into broad slices, cook them on a grill and layer them with tomato and mozzarella. The shape is especially useful when you want substantial slices to remain distinct on the plate.

For La Cucina Italiana’s version of Sicilian caponata, use round purple eggplant. Fry the cubes before adding them to the other vegetables, capers, olives and sweet-and-sour dressing. This is one version among family and regional variations.

Choose by shape and cultivar

Choose rounded purple fruit and ask the cultivar if you want a particular skin shade. Prosperosa and Birgah are examples described by the seed producer Ingegnoli, not the only members of the group.
