Try it in the kitchen
Slice light green zucchini into a skillet with olive oil, then serve them with cooked white beans and basil. Choose thicker pieces when you want the shape to remain evident.
In Francesco Vincenzi’s dish for La Cucina Italiana, light Bolognese zucchini accompany asparagus, dark zucchini ribbons and pecorino sauce. Split the pale zucchini lengthwise and brown the cut side. Bolognese, Genovese and di Faenza are distinct varieties.
Ask about the shape
A pale skin does not tell you the fruit’s shape. Ask for a cylindrical type or a shorter one according to the cut you want; these cultivar descriptions are examples, not the full range of light green zucchini.
