Infusion and suspension

Associazione Genepì Occitan describes two ways of drawing aroma from dried plants. For infusion, they go into a mixture of water and alcohol in stainless-steel containers. The infusion is pressed, then water and sugar are added; resting and filtration remove sediment.

For suspension, the dried plants sit on grids above the liquid in sealed containers. Alcohol takes up their aromatic and bitter components without the plants being immersed. The association describes this method’s finished liqueur as colorless.
