Try it in the kitchen
Use cooked chickpeas in a warm salad with roasted peppers and olive oil, or crush part of a potful into a soup. The first preparation keeps the seeds visible; the second gives the broth more substance.
Choose the form for the dish
Check whether you are buying dried chickpeas or cooked chickpeas, and read the preparation directions. A seed color or the broad Kabuli/Desi grouping does not, by itself, establish an Italian regional origin.
