From seasonal harvest to infusion
In an interview published by Osservatorio sul Merito, Nuccio Caffo describes Vecchio Amaro del Capo as a Calabrian recipe refined through four generations of distillers. His account names twenty-nine botanicals, including herbs, flowers, fruits and roots.
Each ingredient is gathered by hand at its appropriate time of year. Caffo describes maceration and infusion in alcohol immediately after harvesting, placing the extraction of the botanicals’ aromas at the center of the process.
